Oh my goodness these are awesome. Latke is a fried vegetable cake that is super crispy and has great flavor. Salting and draining the grated vegetables first helps you get that crunch. This version has sweet potato, carrots, onion, zucchini, and potato combined to make you a tasty, crunchy pancake.

Vegetable Latkes

1              potato

1              sweet potato

1              zucchini

1              carrot

1              green onion (all)

1/4c       flour

1              egg

pinch     baking soda

                salt and pepper

3T to 1/2c avocado oil

Grate 1 medium potato, 1 medium sweet potato, 1 medium zucchini, 1 large carrot, mixing well. Place grated vegetables in a kitchen towel. Sprinkle 1/2t salt and set aside to drain for 15-20 minutes.

Wring out as much water as possible. Add 1 green onion diced, 1/4c flour, 1 egg, pinch of baking soda, 1/2t salt, and 1/2t pepper. Mix well.

In large frying pan on medium high, heat 1-2T avocado oil. Drop vegetable mixture by tablespoon into oil and press down lightly to flatten slightly. Frying on each side 3-5 minutes.

Set latkes on paper towel to drain and repeat until all vegetable mixture is used. Adding more oil before each batch. Be sure to watch the heat, as the pan gets hotter you may need to adjust the temperature down a little.

Can be served with sour cream, salsa, and/or guacamole.
